Nicholas Thomas was born in Melbourne Australia. After high school he explored several career paths before finally deciding to be a chef. After culinary school he apprenticed at some of the finest restaurants in Australia. Cooking led him to New York, where he worked at the highest level, at the Gramercy Tavern.
